Almost every day I talk to someone who is either a new Mommy or about to be one and I imagine that most of us struggle with finding the time and energy to spend in the kitchen. I thought this would be a great format for all of us to share good recipes, websites, or resources with each other for some inspiration. Finding an available blog name was hard, let me know if anyone can think of something more unique to change it to and I'll keep trying :)
Any ideas for pleasing the under 1 year old palate are greatly appreciated too!

ReplyDeletei'm more hoping along the lines of Rachel Ray...okay, i'm a big fan of not measuring,so stir frys and casseroles are my specialty... try this
ReplyDeleteSTUFFED PEPPERS (or use tomatoes, delicious!)
pound of turkey or low fat ground beef, brown it first
small container of salsa
cup or so of white or (brown is healthier) rice
you can add black beans for fiber
when everything is all simmered together for a few minutes, spoon into peppers (you can boil them for a few minutes first), put under thebroiler for about 10 minutes, then add mont jack cheese on top, back under broiler for a few and presto, dinner is served!
Notes... if you are doing adkins, substitute rice for a little bit of egg beaters stirred in before you put into peppers, sounds weird, its good!
I also use this same mix for tacos, the beans add bulk w/out a lot of calories!
